The first limited edition gin for 2024 is based on the concept of "good for the pot".
By combining parts where the kelp was directly placed in the distillation kettle and parts where the kelp was soaked the day before, we devised how the temperature rises and how the mixture is made to express the flavor of the kelp and the sense of dashi. And we added a lot of yuzu peel to the basket to add a touch of glamour.
In the mouth, the flavor of kelp spreads and gradually gives way to the gentle citrus aroma of yuzu peel and a moderate bitterness.
When mixed with tonic, it adds acidity and sweetness, making it feel more fruity. We also recommend simply sodering it up and enjoying it with a meal.
