DistiRally NEXT is an annual event that brings together gin makers from all over Japan to create a special gin with the ingredients they bring to the table, We decided to distill and blend all 22 ingredients, including juniper berries, into a single distillate. We made many adjustments to balance each ingredient as THE HERBALIST YASO.
And the finished zine was "Imaginary Leaves on Trees in the Forest".
Each leaf of the trees has its own character and various faces. The finish is characterized by the change in aroma felt each time it is left in the glass and the change in taste from the time it is in the mouth to after drinking, with the first half feeling youthful and dignified, and the sweetness and roundness coming through in the middle to the second half.
When mixed with tonic, the fruity and floral notes come to the fore. The taste is moderately sweet but also has a strong bitterness, so the finish is clean.
With soda, the floral and Japanese herbal flavors are robust, with a lingering citrus acidity that is gentle.
When served with hot water, it has a citrus and floral aroma and a bitter taste with a herbal flavor, so we recommend adding a little syrup.
Just as each distillery has its own gin.
