THE HERBALIST YASO GIN 2nd barrel

It has been a long time since the last release, and in fact, two barrels were kegged at that time, and we have now bottled the remaining one barrel.
The first batch was released early because the flavors of the barrels came on rather quickly, but this second batch was left untouched because when we checked it at the time, it looked like it would still need to be left to grow.
It has been 28 months since it was casked and its condition has changed for the better, so we are now ready to release it. As before, only juniper berries were used during the redistillation, and the distillate was stored in casks that had been used in distilleries on the island of Islay.

This time, the alcohol content has been reduced to 491 TP3T, and the finish has a fruity part in addition to the smoky element. The greenish yellow liquid has a soft sea breeze aroma with hints of orange and crème brûlée. The woody, nutty sweetness of juniper berries and oak is complemented by the pungency of peel, and a herbal note appears in the finish.
Gin & Tonic gives it a more fruity finish, and the iodine and ginger-like spiciness pulls the whole thing together.
It is recommended as a food wine because of its juniper berry flavor, iodine taste, slight sweetness, and clean aftertaste when served with soda.

Try it with oysters and seafood marinade while feeling the sea breeze.
