I was planning to finish 2011 with a certain basketball manga and idols, but recently I got hooked on a popular yokai manga and have been enjoying making plush toys. I am quietly thinking that I would like to make a zine in the image of my guess for the year 2012.
Off topic, but the first limited edition of 2024 is a gin made with yuzu peel and kelp.
In January, we decided to create a soup stock concept that would go well with hot pots! This zine was born out of our discussion.
The gentle aroma of yuzu peel and the flavor of kelp that spreads in the mouth, the result looks like a good match for hot pot or yudofu.

In this case, we blended three parts and added a yuzu peel part taken at reduced pressure at the end.
The first is the juniper part. The amount of juniper used in the distillation process is the same as in the regular product, but with a firm juniper feel.
The second part was distilled by placing kelp in a distiller and adding yuzu peel, green tea, and hebes in a basket. The kelp was distilled with careful attention to the temperature because if the kelp was overcooked, the kelp flavor would come out too much.
When the first distillation started and I tasted it, the sweetness of the yuzu and the kombu flavor was quite promising. As time went by, the kombu flavor became quite strong (like a kombu roll) and that is where we cut it. Between that and the fact that cleaning the kettle after distillation was difficult, the aroma of kelp lingered in the distillery until the next day.

The third is the part where the kelp is soaked the day before and removed just before distillation, and the basket is filled with an increased amount of yuzu peel.
Although what was put in the kettle was no different from the second one, the taste was quite different, with or without the kettle. It is more like the flavor and sweetness of the dashi broth rather than the direct flavor of the kelp.

Incidentally, the name comes from the image of kelp looking at the moon from the sea. Personally, I like the name because it sounds like the title of a movie.
I hope to continue to make delicious and interesting zines this year, starting with regular products and also limited editions.
