Hello everyone, nice to meet you. My name is Fuse, and I am in charge of distillation.
Recently, the number of chilly days has been increasing, and for the first time in a long time, I can feel the arrival of autumn. It has been about two years since I noticed the arrival of "autumn-like autumn. Among the four seasons, I like autumn the best, when the air becomes increasingly clear and crisp. I am spending my time leisurely, wishing it would stay autumn all the time.
Now, for our first Premium Edition, we chose "peach" as the main botanical.
In fact, this gin is a special bottle that will be available in limited quantities.
Having participated in last year's Limited Edition for a bit, when I thought about what I would like to use if I were in charge of the main production, what immediately came to mind was "peaches," my favorite of all fruits.

The peaches used were from Nagano Prefecture and Sanjo City, Niigata Prefecture. From the day they arrive, we check the aroma of each one to determine their full ripeness before using them. Only three botanicals were used this time: juniper berries, peaches, and jasmine flowers. Juniper berries and peaches were distilled individually under atmospheric pressure, while jasmine was distilled under reduced pressure to bring out the best of each ingredient. However, it took many prototypes and verifications before we were able to achieve a satisfactory balance even with only these three ingredients in our design.


Before I started, I had the opportunity to learn about a gin made with peaches when we were talking in the distillery, and the moment I tasted it I encountered an aroma that fit the image I had in my mind. Based on that experience, I have been working to solidify the direction of this project. When we were talking at the distillery about how to enhance the aroma of peaches when actually combining peaches with YASO's original sake... we discussed the idea of distilling several batches at different alcohol levels, and we repeated trial runs and adjustments many times. As a result, we were able to bring out the fresh aroma of peaches by distilling at a lower alcohol content.
Fresh peach aroma first emerged from the peaches distilled at a lower alcohol content. As the distillation proceeded, a buttery, milky aroma gradually emerged, and we carefully timed the cut. When combined with the juniper berry parts, the rich, sweet aroma of peaches was well enhanced. However, by itself, the taste was not tight and gave the impression of being more like a juice than a liquor. After repeated trial and error, we arrived at jasmine flowers as the ideal ingredient to enhance the peach aroma without interfering with it. The slight astringency of the flowers in the sweet and soft flavor completes the overall taste.

We named this gin "Sillage léger", which means "light lingering aroma" in French. This word means "light lingering aroma" in French, and we hope that the aroma will gently linger in your memory even after you finish the bottle. It is our hope that it will remain in your memory even after you have finished drinking it.
From the planning stage to distillation, this bottle was created over a long period of time, with many stops and adjustments. Therefore, the number of bottles produced is very small. It is a very rare and limited product. We hope you will enjoy the rich flavor with a delicate aroma of peaches, as well as the thought that went into the name "Sillage Léger.
