After harvesting, the flowers and stems are separated and stored, and the stems and flowers are macerated to extract the aroma before being distilled according to their characteristics.
It is further distilled separately from dried and fresh lavender, and finally blended.
This is a distillation of the best of both worlds, with a focus on the cutting points so that the best of both worlds can be utilized.
In addition, we changed the botanicals in the base gin to create a scent that gently accompanies the lavender.
Then, in August, we moved to a new distillery and the first thing we distilled was this lavender gin.
