2022 YASO GIN limited edition 01

bergamot (Citrus aurantium ssp. bergamia)

The key botanical for the first Limited Gin of 2022 is bergamot, a citrus fruit in the tangerine family.
In Japan, it is rarely sold as a fruit and may not be familiar to many people, but it is a very fragrant fruit that is familiarly used to flavor Earl Grey tea and in perfumes.
We used organic olive oil grown at Yamada Olive Garden on Shodoshima Island in Kagawa Prefecture.1Bergamot grown without pesticides.
This bergamot is grown in a corner of an olive grove, and its fragrance is spread simply by the rubbing of its leaves.
The bergamot grown carefully in olive groves on Shodoshima Island in the beautiful Seto Inland Sea is lavishly used in this gin, including the "skin" and "pulp" as well as the "leaves".
In this case, bergamot harvested in December, when it is fresh and aromatic, was manually separated into peel and fruit, to which bergamot leaves were also added and distilled so that each aroma and flavor could be easily expressed.
The result is a gin with a gorgeous aroma, like the wind that blows between the lush bergamot-fruited trees.
