THE HERBALIST YASO GIN YUZU is a new addition to THE HERBALIST YASO series starting in February.
This gin has a robust flavor with a glossy yuzu aroma and rich bitterness from the peel, combined with the taste of juniper berries.
YASO GIN Yuzu aimed to create a flavor that has both Japanese and Western elements. Therefore, in addition to yuzu peel and juniper berries, we added Japanese-inspired botanicals such as sansho (Japanese pepper), shiso leaves, and tea, as well as Western spices such as coriander seeds and cinnamon leaves.
The result is a drink that has a deep flavor profile, with a strong sense of yuzu, but that can also be enjoyed in harmony with other botanicals.
YASO GIN Yuzu is also made by blending several parts distilled separately. One part is made by macerating and distilling only juniper berries, and the other part is made by filling a basket with yuzu peel and distilling it through steam without maceration, using atmospheric distillation with direct heat application.
Juniper berries are soaked in the base spirit the day before in larger quantities than usual and then distilled directly. This allows us to extract more of the juniper flavor.
Oba, Sansho, cinnamon leaf, and coriander seed are each distilled by reduced-pressure distillation to bring out the aroma of the ingredients themselves. By changing the distillation method in this way, and furthermore distilling each of these separately and finishing with a blend, we have paid attention to every detail, including fine aroma nuances and flavor balance.
When mixed with tonic, the rich bitterness of the yuzu peel is enhanced while the juicy flavor of juniper berries spreads out to create a fruity gin and tonic. When mixed with soda, the flavor of yuzu, sansho (Japanese pepper), and coriander are enhanced, resulting in a refreshing and refreshing drink that can easily be served with a meal. The yuzu aroma spreads with the bitterness of the peel and the flavor of juniper berries, making it a relaxing drink to enjoy with hot water. White chocolate and dried fruits are recommended as snacks.
