It was probably in the summer of 2024 when we received an offer to collaborate with Mr. Jin Akanishi on a project.

Out of the blue, what happened? I was so surprised that I froze at first, but I was so grateful and thankful that they chose our company.

Then came the exploration of making gin and liqueur.

In this diary, I, Umeda, will write about liqueurs.

He likes bitter-tasting herbal drinks. ...... At first, his words led us to imagine what we could do with them. The first prototypes were roughly six different kinds, each with and without sweetness, and different amounts and types of spices and herbs.

He checked these prototypes and gave us various opinions (as shown in the video), which we used as reference to make the prototypes again. I was very enthusiastic about it, and my desire to make it good became stronger.

We thought about what we should do when we watched the video that we received feedback on, but what we particularly focused on was the ratio of sweetness to bitterness, aiming to create a bitter yet refreshing liqueur.

Yes, it is an adult flavor. Not just bitter like a good black coffee, but also flavorful and umami. We made many prototypes to create a bitter liqueur colored with herbs, spices, and citrus fruits.

The liqueur is now ready to be enjoyed with soda, which is his usual drink, at first.

A variety of bitterness, herbs, and spices show up, and the end result is a rush of bitterness and freshness.
