Lavender, which has been very popular in YASO’s non-alcoholic gin, is now available in a limited gin.
The lavender is harvested at “Niigata Lavender Story” in Niigata City.
Luxurious use of two varieties of lavender harvested in brilliant sunshine and surrounded by the fragrance of lavender.
After harvesting, the lavender is stored separately from the flowers and stems. The stems and flowers are macerated to extract the fragrance, and the distillation method is changed according to their characteristics.
The dried lavender is further distilled separately from the fresh lavender, and finally blended.
The distillation was done with careful attention to the cut points so that the best of both would be brought out in the distillation.
In addition, the base gin was made with a different blend of botanicals than usual, with the aim of creating a scent that gently accompanies the lavender.
Then, in August, we moved to a new distillery and the first thing we distilled was this lavender gin.
Lavender has a sweet, gorgeous, yet somehow refreshing, relaxing and soothing aroma.
This bottle captures that aroma in a bottle.
