Bergamot

The key botanical of the first limited gin in 2022 is Bergamot which belongs to the Citrus genus of the family Rutaceae. We seldom see it as an edible fruit, but It’s well known for its fragrant peel, or flavoring use for Earl Grey. We used Bergamot grown organically, pesticide-free in Yamada Olive Grove on Azuki Island, Kagawa prefecture. The fragrance of these bergamots spreads by rubbing their leaves on each other, which is grown in the corner of the olive field.

We make use of plenty of the bergamot with its peels, flesh and leaves for the gin, which is grown on Azuki Island in the beautiful Seto Inland Sea .

We manually peel bergamots harvested in December when they smell very strongly, and distill them in order to smell the scent and taste of each ingredient by adding its leaves as well.

We finish the gin to spread gorgeous fragrance like passing through trees, which bear fresh green bergamot.
