The key botanical in this limited gin is cacao.
As you know, this plant is used to make chocolate and cacao.
However, it is probably not well known that chocolate is a fermented food.
For this limited edition GIN, we used the Arriba (Nacional) variety, a rare endemic species grown in Ecuador, a country just below the equator. Characterized by its powerful aroma and gorgeous aftertaste, this cacao continues to offer a rich, chocolatey aroma even after distillation.
The harmony of this rare cacao and the fermentation of wild herbs creates a special gin that cannot be tasted anywhere else.
