The first limited edition gin of 2024 is a gin with the concept of “going well with hot pot.” By combining parts that put kelp directly into the still pot and parts that soaked kelp the day before, we devised ways to raise the temperature and mix to express the flavor and soup stock of kelp. Add a touch of elegance by adding plenty of yuzu peel to the basket. When you put it in your mouth, the umami flavor of kelp spreads out, followed by the gentle citrus aroma of yuzu peel and just the right amount of bitterness. Mixing it with tonic adds sourness and sweetness, giving it a fruitier feel, and we also recommend simply adding soda and enjoying it with your meal.
