How are you all doing? My name is Yamada, and I will be in charge of this month's diary.
There were not many clear and sunny days in September due to typhoons and other factors.
I was in a low-pressure area, and my motivation, the motivation to do things, was being sapped away.
October is personally my favorite month of the year, and this year there will be many events, so I would like to keep my spirits up!
Now, let me preface by saying that the limited edition for October is "Lemonade".
The sweet and bitter lemon flavor is combined with the fresh rosemary and sweet orange flower aroma to create a deep, adult lemonade.
How about spending a melancholy autumn night with a bitter sweet gin in your hand as you gradually feel the cold?

This will be the second distillation after moving to a new distillery.
We are still distilling even now, with many aspects still to be explored.
I feel that the change in the machine has significantly reduced the burning aroma and the bitterness that appears at the end of the process.
Again, the botanicals and gin used as an addition are distilled separately and then blended.
Place everything in the basket except the lemon fruit.
It goes into the basket like crazy, partly because the machine is bigger, and partly because the amount that can be done at one time has increased dramatically.
Place a large amount of lemon zest, rosemary, and orange fuller in a three-tiered basket.
Incidentally, 20 kg of lemons, including the fruit, were blended into the Limited10.
It was hard work peeling off the skins one by one, but thanks to the delicious lemon aroma, I was able to do it without feeling overwhelmed.

Everything is set and distillation begins.
At this stage of writing the diary, I am still nervous because it is not fully finished, but the prototype I made was very good, so I will wait until the end of the project with high expectations.
We were talking about this yesterday, and the new distiller seems to work quite well with citrus...!
I feel that freshness is expressed as it is.

Lemonade" is a limitededition10 "Lemonade" with an abundance of lemon and accents of orange flower and rosemary.
The new distillation process gives the lemonade a clearer flavor, which combined with the fresh sweet bitterness of the lemon, makes it a very approachable and mature lemonade.
Incidentally, when I was deciding what to add to my subs, I also drank one mixed with ginger ale, which was also good for me personally.
It had a sweet taste that gave it a lemon-ginger feel rather than lemonade, which I would like to drink when the weather gets a little colder.
We hope you will enjoy it in various ways.
That's it for this issue of the Diary!
October is a busy month for us with events and distillery openings, but we hope you will check our social networking sites.
By the way, today I enjoyed a meal with non-alcoholic beverages at the pairing lab above. Even with non-alcoholic beverages, the atmosphere alone is intoxicating.
Thank you for your patience! Please look forward to the next issue of the Diary!
