My name is Yamada, and I will be in charge of this month’s diary.
It has been particularly cold and snowy here in Joetsu since late January.
While distilling, I am looking at the snow falling frequently and feeling the severity of nature very keenly.
As the cold weather is expected to continue for a while, we made a “Ginger Ale Gin” to warm up your body.
The flavor of ginger and cinnamon and cardamom create a gin that warms the body with its aroma alone.
The base juniper parts remain the same, but this time the distilled ginger parts are blended to make it more like a ginger ale.
This time, we have added a much larger percentage of distilled ginger and other parts to the base, which we believe makes the limited edition more interesting and enjoyable.
The ginger we used is called “Osyoga” from Kochi Prefecture in Japan.
Some people may not be familiar with “Osyaga” but it is a variety of ginger that is commonly available in the world.
Ginger has a mild pungent taste and warms the body, and it seems to calm the mind as well.
I cut ginger and distilled it by adding so much that it just barely soaked the surface of the liquid.
I was surprised to see so much ginger, since I personally use it as a spice when I buy it.
When distilling the ginger part, we added not only ginger but also lemon, cinnamon, and cardamom together.
The addition of these added a spice element to the taste and aroma gave it a stronger ginger ale feel.
It is so much fun every time to see how adding something and something else brings it closer to one finished product.
This month’s limited “Ginger Ale” uses ginger from Kochi Prefecture.
The mild pungency of the large ginger and spices such as cinnamon warm the body, making it the perfect gin for winter.
It is also thought to be a gin that goes well with meals such as Korean cuisine.
Personally, I like to cook it in a deep fryer with a lot of oil.
I want to enjoy it with leek pancakes and tappal made with fried oil.
