May’s limited edition gin is “Chamomile Orange”.
This is the first gin for which YASO distiller Yamada was in charge of everything from botanical selection to blending.
The result is a gin with the warmth of spring, with the aroma of chamomile, like the beautiful sunshine of May, gently supported by orange and cinnamon.
The chamomile is from Croatia, with the addition of domestic chamomile to balance it out.
However, it was actually very difficult to extract the aroma of this chamomile.
After prototyping, we succeeded in extracting a natural, floral aroma by adjusting the temperature rise during distillation in this machine, determining the cutting position while checking the flavor, and devising a blend.
To this chamomile aroma, cinnamon was blended to add warmth, and orange peel and bergamot were added to accentuate the aroma and flavor.
When mixed with soda or tonic, the aroma of not only chamomile but also other ingredients spread out, creating a cocktail that evokes the warmth of spring.
