Press Release] "Echigo Yakuso Distillery," where visitors can experience "YASO" as art, will open around late August 2022.

(President: Kazushi Tsukada, Head Office: Joetsu City, Niigata Prefecture) will open a "distillery like a museum" on the premises of its head office in Joetsu City, based on the concept of tasting the world of "YASO" through the five senses as art. We are pleased to announce the opening of "Echigo Yakuso Distillery" as follows.

Experience "YASO" as art "Echigo Yakuso Distillery

Echigo Yakuso Distillery" will be the first distillery restaurant in Niigata Prefecture, which will feature distilling scenery, contemporary art, and even a restaurant bar, thanks to our customers, through the use of crowdfunding. It is a space-integrated distillery where visitors can also enjoy the scenery of Joetsu City.

The first floor is the factory floor. Visitors can observe the actual distillation process and experience the aroma of "YASO" during distillation.

The second floor is an open-space, open-air art gallery floor. Artworks based on the theme of plants and fermentation will be exhibited for a limited time. Visitors can enjoy the sensibility that can only be created at "Echigo Yakuso Distillery" through the fusion of distillation and art.

3rd floor restaurant bar (image)

The third floor will serve as a restaurant-bar, offering dishes that make the most of YASO and local ingredients. The restaurant is a distillery where guests can experience the pairings that are created and enjoy the marriage of food and alcohol. The restaurant's all-glass walls provide a 360° panoramic view of the restaurant, allowing diners to enjoy an extraordinary space.

Echigo Herbal Distillery" Project

We are launching a recycling-oriented distillery project that takes into consideration the natural environment.

Echigo Yakuso produces health foods (enzyme products) from 80 different ingredients, mainly wild herbs. We would like to express as art "unique spirits" made from alcohol, which is a byproduct of the manufacturing process, and "memorable gin" created by adding more botanicals. We are also interested in the "memorable gin" created by adding botanicals to the gin.

On the other hand, however, many of the plants used as raw materials are disposed of as residues. Therefore, a garden will be established on the site, and spices and juniper berries will be grown using the residues as fertilizer and used as raw materials for "YASO". We are building a "cycle that takes into consideration the natural environment" rather than a phase of recycling.

The key is to build a distillery that enables circulation to eliminate all losses, including waste. Echigo Yakuso aims to build a recycling-oriented distillery that does not produce any waste. We have respect for nature because we are allowed to use the mugwort plant to make our products, and we have an inseparable relationship with the plant. We will continue to work on various projects closely connected to nature and the local community for the next 50 to 100 years.
