It has been a while, but I am Yamada, who will be in charge of this month's diary.
It will soon be Golden Week.
This year I am more excited than usual because I plan to do various genres of otaku activities during my vacation. (Hey, I think I wrote something like this in my diary last year...?)

Now, this month's limited is chamomile orange.
In fact, this is the first time I have been allowed to decide on botanicals and do all the blending and stuff...
Fortunately, I had time, so I managed to shape it into a form while listening to the opinions of the department head and Mr. Sugikawa.
The zin is supposed to have the warmth of spring with the aroma of chamomile but with the underpinnings of orange and cinnamon.
In this case, I blended juniper, chamomile, marigold, orange, cinnamon, and many other parts.
Juniper was cut in a different position than usual to facilitate sweetness.
A little domestic chamomile was also added to balance the aroma.
This was the first time I used domestic chamomile, and the aroma seemed to gently penetrate my nose.
We tried several times to distill chamomile by itself, using a prototype machine and a small distiller that we used before the distillery was built, but there was a very distinctive aroma that remained...the aroma of chamomile was there, but there was a watery scent that we had a really hard time removing. I really struggled to get it out.
I was so happy that I was able to get rid of this aroma and get the chamomile aroma when I turned it on the machine while working on the cutting position, temperature rise, and mixing.
(By the way, I finished taking the chamomile today as I write this diary.)

Although chamomile alone had floral elements, it did not have much sweetness, so to add warmth, cinnamon was distilled several times in a prototype machine and used in small quantities.
In addition, small amounts of orange peel and bergamot were added to accentuate the aroma and taste.

We recommend mixing it with tonic, which will spread the aroma of the chamomile as well as the other ingredients and add sweetness.
Limited is something we do every month, but when it came time to choose the formula and materials, it was a really difficult task... We spent our days nervous and on edge until the decision was made....
However, I felt a great sense of joy and accomplishment when the decision was made.
I can only thank the director of the department who gave me a lot of advice and opinions....
