■Launched new product "THE HERBALIST YASO JIN
Since Jin Akanishi does not usually drink sweet drinks, we aimed to create a dry gin. Nine botanicals, including juniper berries, were used and distilled using a distillation method that suited the ingredients. Juniper berries and ginseng were macerated distilled to bring out their aroma and bitterness, while orange and lemon peel were steam distilled to emphasize their citrus freshness. Ginger, thyme, rosemary, and green pepper are distilled by reduced-pressure distillation to bring out the original flavors of the ingredients.
The sweet, herbal aroma of juniper berries is harmonized with the freshness of citrus, the bitterness of ginseng, the pungency of ginger and green pepper, and the green notes of rosemary and thyme to create a dry yet deep flavor.

Navel orange peel, lemon peel, Japanese Hakka, thyme, ginseng, angelica root, allspice, margao, and black tea are soaked in alcohol produced in-house, and after extracting, sugar and other ingredients are added. When poured into a glass, the spice and citrus aroma spreads, harmonizing with the exotic sweetness and earthiness of ginseng and angelica root. In the mouth, the fruity sweetness is followed by the intense spice and earthy bitterness of ginseng and angelica root, and finally the freshness and bitterness of the herbs are felt in the aftertaste.

The alcoholic beverages we sell are made from the alcohol produced in the process of manufacturing enzymatic beverages, which is distilled twice and used as a spirit. This spirit becomes the base for making gin and liqueur, and this collaboration was made possible by the interest of Jin Akanishi, a medicinal herb drink enthusiast, in the one-of-a-kind and globally distinctive original spirit produced in this process.
