THE HERBALIST YASO GIN YUZU, which joined THE HERBALIST YASO's regular product lineup in 2025, has been renewed with a partial review of the manufacturing process to further bring out the aroma and flavor of yuzu. The botanicals and base spirit used remain unchanged, and the bottle design remains the same.
Background of Renewal
YASO GIN YUZU has a robust flavor that harmonizes the glossy yuzu aroma, pleasant bitterness from the peel, and juniper berry flavor.
The Japanese ingredients yuzu, shiso leaves, and sansho are combined with Western nuances such as coriander seeds and cinnamon leaves to create a drink that combines the flavors of a variety of botanicals with the appeal of yuzu.
After some time had passed since its release, we decided to re-examine the distillation method itself in order to further pursue the “flavor of yuzu itself”.
I was conscious of the "three-dimensionality of the yuzu.
Prior to the renewal, the aroma and flavor were extracted only by spreading the yuzu peel abundantly in the basket of the distiller and passing the steam through it.
In this new effort, parts of the yuzu peel are extracted by three distillation methods, including the method described above.
3 Yuzu parts
1. basket distillation
Glossy yuzu aroma.
2. distillation of macerated yuzu peel
The bitterness and thickness derived from the yuzu peel are elements that add depth to the flavor.
3. reduced-pressure distilled yuzu peel
It expresses comfort with an aroma similar to that of fresh yuzu.
Although they have different aromas and flavors, they complement each other by combining them, and have evolved into a flavor that allows the presence of yuzu to be felt throughout, even when combined with juniper berries and spices.
Major changes in manufacturing process
The botanicals used were not changed and adjustments were made in the following manner

2. redesigning the ratio of blends, focusing on yuzu parts
The balance of the three types of yuzu parts was verified from scratch to create a composition that better conveys the appeal of yuzu.
The depth of flavor, aroma release, and length of the finish have been clearly improved.
Changes in aroma and taste
After the renewal, YASO GIN YUZU retains the flavor of juniper berries and the pleasant and soothing aroma unique to yuzu. The calmness of the Japanese ingredients and the lightness of the Western ingredients create a multilayered aroma and taste that peeks out from the moment it is poured into the glass until the end of drinking, but the yuzu is firmly at the center of it all.
Recommended Drinking
The most recommended drink is a gin and tonic. The glossy aroma of yuzu is enhanced.
It is also lighter with soda, making it a perfect match as a food wine.
On cold days, we also recommend drinking it with hot water. The aroma of the rising yuzu and the warmth in your hand will relax your mind. (If you want a sweeter taste, add a little syrup.)
Even in straight tasting, the renewal has made it easier to recognize the yuzu flavor and feel the layers of aroma.
Switchover time
The switchover is scheduled to begin in early April 2026.
