THE HERBALIST YASO GIN, exclusive to Niigata Hasegawa-ya, is a special barrel-aged gin sold exclusively at Niigata Hasegawa-ya, a liquor store with a store in Nishigami-ku, Niigata Prefecture.
Based on redistilled base spirit, the only botanical added is juniper berries. After distillation, it is aged for 8 months in oak barrels and finished at 57% alcohol by volume at navy strength.
The structure is simple, with only juniper berry botanicals added, but the 80 botanicals remaining in the base alcohol support the aroma and flavor in the depths, retaining YASO's character.
The barrels used in the distillery on the island of Islay give it a smoky aroma and a tidal scent that tickles the nose and reminds one of the seaside, and the salty taste gives it a juicy juniper fruitiness.
Tonic is recommended as a flavor enhancer. Tonic adds a sweet and sour taste, broadens the aroma, and gives juniper a fruity flavor that is even more pronounced.
