May's limited edition gin is "Chamomile Orange".

This will be the first gin for which YASO distiller Yamada was in charge of everything from botanical selection to blending.
The zin is finished with the warmth of spring, with the scent of chamomile, like the beautiful sunshine of May, gently supported by orange and cinnamon.

The chamomile is from Croatia, with the addition of domestically produced chamomile for balance.
However, I actually had a very difficult time extracting this chamomile aroma.

After the trial distillation, we succeeded in extracting a natural, floral aroma by adjusting the temperature rise, determining the cutting position while checking the flavor, and devising the blending.
This chamomile aroma is blended with cinnamon, which adds warmth, and orange peel and bergamot are added to accentuate the aroma and flavor.
When mixed with soda or tonic, the aroma of not only chamomile but also other ingredients spread out, creating a cocktail with the warmth of spring.
